Venison Backstrap with Blistered Tomato Pan Sauce

A quick, premium venison cook built around a hot pan and peak-season tomatoes.

Cook time: 15 minutes
Serves: 4

Ingredients

  • 1 1/2 pounds venison backstrap
  • Salt and black pepper
  • 2 tablespoons butter
  • 2 cups cherry tomatoes
  • 1 shallot
  • 1/2 cup white wine
  • Fresh basil

Instructions

  1. Sear the backstrap hard on all sides and let it rest.
  2. Blister tomatoes in the same pan.
  3. Add shallot and wine and reduce briefly.
  4. Slice the venison and spoon the sauce over the top.
