Whitetail Roast Tamales with Pepper-Garlic Drippings

Roast is patient meat, and tamales reward the same kind of patience. The venison gets cooked until shreddable, folded with reduced pepper-garlic drippings, and wrapped into a batch that feels worthy of company or a freezer full of future wins.

Ingredients

2 1/2 pounds whitetail roast
3 peppers
5 garlic cloves
1 onion
Masa harina dough for tamales
Stock
Lard or butter
Salt
Black pepper
Corn husks

Method

Braise the roast with peppers, onion, garlic, and stock until shreddable.
Reduce the strained braising liquid until it is glossy and concentrated, then mix some back into the meat.
Prepare masa and spread it on soaked husks.
Fill, wrap, and steam the tamales until the masa releases cleanly.
Serve with extra reduced drippings spooned over the top.

Notes

Tamales freeze beautifully; cool them fully, wrap tightly, and steam or microwave to reheat.
