Whole Squirrel with Garlic and Sage

Tennessee Squirrel Whole built around Garlic and Sage, with enough structure to feel specific and enough restraint to stay useful.

Overview

Tennessee cooking tends to favor skillet work, a little patience, and ingredients that can stand real heat. This version uses Garlic and Sage and a whole roast finish so the Squirrel Whole stays central instead of getting buried under the rest of the plate.

Ingredients

1 1/2 to 2 pounds Squirrel Whole
Kosher salt
Black pepper
Neutral oil or rendered fat
1 to 2 cups Garlic
6 Sage leaves
Optional: 1 small Onions
2 tablespoons butter

Method

Trim and season the Squirrel Whole while you prep the Garlic and Sage.
Set up the pan, pot, or oven before you start cooking so the timing stays calm once the protein goes down.
Roast until the bird or small game is just done, then rest briefly so the juices settle back into place.
Fold in the Garlic and Sage at the right point so they support the cut instead of dissolving into the background.
Rest or hold the protein briefly, then serve while the pan juices or broth still feel connected to the plate.

Notes

Keep the seasoning clean and let the cut set the pace. Leftovers keep best when cooled quickly and packed shallow; Tennessee meals built around Squirrel Whole are usually stronger on day one than after repeated reheats.
