Whole Salmon with Onions and Garlic

New Hampshire Salmon Whole built around Onions and Garlic, with enough structure to feel specific and enough restraint to stay useful.

Overview

New Hampshire cooking rewards restraint, sharper herbs, and a plate that never feels overbuilt. This version uses Onions and Garlic and a whole roast finish so the Salmon Whole stays central instead of getting buried under the rest of the plate.
whole-roast 16 min prep 18 min cook Serves 2

Ingredients

1 1/2 to 2 pounds Salmon Whole
Kosher salt
Black pepper
Neutral oil or rendered fat
1 to 2 cups Onions
1 to 2 cups Garlic
Optional: 1 small Thyme
1 tablespoon butter

Method

Trim and season the Salmon Whole while you prep the Onions and Garlic.
Set up the pan, pot, or oven before you start cooking so the timing stays calm once the protein goes down.
Roast until the bird or small game is just done, then rest briefly so the juices settle back into place.
Fold in the Onions and Garlic at the right point so they support the cut instead of dissolving into the background.
Rest or hold the protein briefly, then serve while the pan juices or broth still feel connected to the plate.

Notes

Keep the seasoning clean and let the cut set the pace. Leftovers keep best when cooled quickly and packed shallow; New Hampshire meals built around Salmon Whole are usually stronger on day one than after repeated reheats.
