Ingredients

1 1/2 to 2 pounds Snapper Whole
Kosher salt
Black pepper
Neutral oil or rendered fat
1 handful Cilantro
1 to 2 cups Onions
Optional: 1 small Peppers
1 tablespoon oil

Method

Trim and season the Snapper Whole while you prep the Cilantro and Onions.
Set up the pan, pot, or oven before you start cooking so the timing stays calm once the protein goes down.
