Dove Breast Dumplings with Pepper Broth and Charred Onions

A small-game recipe that feels elegant without pretending dove breast is something it is not.

Overview

Dove breast does not need to be wrapped in bacon every time. Here it gets chopped fine for dumplings, then served in a pepper broth with charred onions that add enough sweetness and smoke to make the whole bowl feel intentionally built.

Ingredients

12 dove breasts
2 peppers
2 onions
1 package dumpling wrappers
2 cups stock
1 garlic clove
Salt
Black pepper
Oil

Method

Mince the dove breasts finely with one of the onions and season well.
Fill small dumplings and keep them chilled.
Char the peppers and remaining onion, then simmer them with stock into a light broth.
Slip the dumplings into the broth and cook just until the filling is done.
Serve hot with extra charred onion on top.

Notes

Best made the same day, though the dumplings can be frozen uncooked if dusted well with flour.
