Maryland Duck Wild Rice Bake

This is cold-weather casserole cooking at its best: rice, stock, vegetables, and enough bird to turn the dish from side into supper.

Ingredients

  • 1 pound cooked duck or goose meat, chopped
  • 2 cups cooked wild rice or blended rice
  • 1 onion, diced
  • 2 cups mushrooms or chopped vegetables
  • 1 cup cream or stock
  • 2 tablespoons butter
  • 1 teaspoon thyme
  • 1/2 cup grated hard cheese

Instructions

  1. Butter a baking dish and combine the meat, rice, onion, vegetables, cream or stock, thyme, salt, and pepper.
  2. Top with the cheese and dot with butter.
  3. Bake at 375 degrees F until hot through and bronzed on top, about 25 minutes.
  4. Serve with a bitter salad or simple greens.
