Compatible species and required cuts

Use these cuts: backstrap, tenderloin.

Axis Deer: Use only the specified cut and weighed, trimmed yield. Inspect wild harvests for shot, bone fragments and damaged tissue before cooking.

Ingredients

1 1/2 lb axis loin, in 1-inch cubes 2 zucchini, in 3/4-inch rounds 1 red onion, in wedges 1 lemon, zest and juice 2 tbsp olive oil 2 garlic cloves, minced 1 tbsp chopped parsley 1 tsp dried oregano 3/4 tsp kosher salt 1/2 tsp black pepper

Method

Reserve half the lemon juice and parsley in a clean bowl for serving. Toss meat with 1 tbsp oil, garlic, zest, oregano, salt and pepper. Refrigerate 15 minutes while heating grill to medium-high. Toss zucchini and onion with remaining oil. Thread vegetables and meat on separate skewers so they can finish independently. Grill vegetables 8–12 minutes, turning often. Grill meat about 8–12 minutes, turning every 2–3 minutes, until several center cubes reach 160°F. Transfer with clean utensils. Drizzle reserved lemon-parsley mixture over cooked skewers. Do not reuse raw-meat marinade. Wooden skewers should be soaked before use. Allergens: None of the major allergens. Check labels on packaged ingredients.
