Wild Turkey and Sweet Potato Hash

Ingredients

  • 2 cups cooked wild turkey, shredded
  • 2 medium sweet potatoes, diced (garden-grown)
  • 1 medium onion, diced (garden-grown)
  • 1 bell pepper, diced (garden-grown)
  • 2 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 4 eggs

Instructions

  1. Heat olive oil in a large skillet. Cook the sweet potatoes over medium heat until golden and tender, about 10 minutes.
  2. Add onion, bell pepper, and wild turkey. Cook until the vegetables are softened and the turkey is heated through, about 8 minutes.
  3. Season with paprika, garlic powder, salt, and pepper. Make four wells in the hash and crack an egg into each. Cover and cook until the eggs are set, about 5 minutes.
  4. Serve hot, garnished with parsley if desired.
