Ingredients
- 2 cups cooked wild turkey, shredded
- 2 medium sweet potatoes, diced (garden-grown)
- 1 medium onion, diced (garden-grown)
- 1 bell pepper, diced (garden-grown)
- 2 tbsp olive oil
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 4 eggs
Instructions
- Heat olive oil in a large skillet. Cook the sweet potatoes over medium heat until golden and tender, about 10 minutes.
- Add onion, bell pepper, and wild turkey. Cook until the vegetables are softened and the turkey is heated through, about 8 minutes.
- Season with paprika, garlic powder, salt, and pepper. Make four wells in the hash and crack an egg into each. Cover and cook until the eggs are set, about 5 minutes.
- Serve hot, garnished with parsley if desired.
