Wild Boar Bolognese

Ingredients

  • 1 lb ground wild boar
  • 1 medium onion, diced (garden-grown)
  • 2 cloves garlic, minced (garden-grown)
  • 1 carrot, diced (garden-grown)
  • 2 tbsp tomato paste
  • 1 can (28 oz) crushed tomatoes
  • 1 cup red wine
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp fresh thyme (garden-grown)
  • Salt and pepper to taste
  • 12 oz pasta of choice

Instructions

  1. Heat olive oil in a large pot. Sauté onion, garlic, carrot, and wild boar until the meat is browned.
  2. Stir in tomato paste and cook for 2 minutes. Add crushed tomatoes, wine, oregano, and thyme. Simmer for 1 hour, stirring occasionally.
  3. Cook pasta according to package instructions. Serve the sauce over the pasta, garnished with Parmesan cheese if desired.
