Ingredients
- 1 lb ground wild boar
- 1 medium onion, diced (garden-grown)
- 2 cloves garlic, minced (garden-grown)
- 1 carrot, diced (garden-grown)
- 2 tbsp tomato paste
- 1 can (28 oz) crushed tomatoes
- 1 cup red wine
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp fresh thyme (garden-grown)
- Salt and pepper to taste
- 12 oz pasta of choice
Instructions
- Heat olive oil in a large pot. Sauté onion, garlic, carrot, and wild boar until the meat is browned.
- Stir in tomato paste and cook for 2 minutes. Add crushed tomatoes, wine, oregano, and thyme. Simmer for 1 hour, stirring occasionally.
- Cook pasta according to package instructions. Serve the sauce over the pasta, garnished with Parmesan cheese if desired.
