Venison Stroganoff with Creamy Mushrooms

Ingredients

  • 1 lb venison (whitetail deer), thinly sliced
  • Salt and pepper to taste
  • 2 tbsp butter
  • 1 onion, diced
  • 2 cups mushrooms, sliced
  • 2 tbsp flour
  • 1 cup beef or game stock
  • 1 cup sour cream
  • 12 oz egg noodles, cooked

Instructions

  1. Season venison slices with salt and pepper. In a large skillet, heat butter over medium heat and sear the venison until browned. Remove and set aside.
  2. In the same skillet, sauté onions and mushrooms until softened.
  3. Stir in flour and cook for 1 minute. Gradually add stock, stirring constantly, until the sauce thickens.
  4. Reduce heat to low and stir in sour cream. Return the venison to the skillet and simmer for 10 minutes.
  5. Serve over cooked egg noodles.
