Venison Roast with Rosemary and Juniper

Ingredients

  • 1 venison roast (2-3 lbs)
  • 2 tbsp olive oil
  • 1 tbsp rosemary (garden or locally grown)
  • 1 tsp juniper berries, crushed
  • 2 garlic cloves, minced
  • 1 cup beef stock
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Rub the venison roast with olive oil, rosemary, juniper berries, garlic, salt, and black pepper.
  3. Heat a large skillet over medium-high heat and sear the roast on all sides.
  4. Transfer the roast to a roasting pan and add beef stock to the bottom of the pan.
  5. Cover with foil and roast for 2 hours, or until the internal temperature reaches 145°F (63°C).
  6. Let rest for 10 minutes before slicing. Serve with roasted vegetables or mashed potatoes.
