Venison Roast with Garlic Herb Rub

This tender and flavorful whitetail deer roast is seasoned with a garlic herb rub and slow-cooked to perfection. A hearty dish perfect for family gatherings and showcasing wild game.

Ingredients

  • 2 lbs whitetail deer roast
  • 3 cloves garlic, minced (garden-grown)
  • 1 tbsp fresh rosemary, chopped (garden-grown)
  • 1 tbsp fresh thyme, chopped (garden-grown)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Preheat your oven to 275°F (135°C).
  2. In a small bowl, combine garlic, rosemary, thyme, olive oil, salt, and pepper.
  3. Rub the mixture all over the deer roast.
  4. Place the roast in a roasting pan and cook for 2-3 hours or until the internal temperature reaches 135°F for medium-rare.
  5. Let rest for 10 minutes before slicing and serving.
