Venison Meatloaf with Garden Herbs

Ingredients

  • 2 lbs ground venison
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1 medium onion, finely diced (garden-grown)
  • 1 tbsp parsley, chopped (garden-grown)
  • 1 tbsp thyme, chopped (garden-grown)
  • 1 tsp garlic powder
  • 1/4 cup ketchup
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). In a large bowl, combine venison, breadcrumbs, milk, egg, onion, herbs, garlic powder, salt, and pepper.
  2. Shape into a loaf and place on a baking sheet lined with parchment paper. Spread ketchup on top.
  3. Bake for 1 hour, or until cooked through. Let rest for 10 minutes before slicing. Serve with mashed potatoes or roasted vegetables.
