Venison Chili with Smoky Chipotle

Ingredients

  • 1 lb ground venison
  • 1 onion, chopped (garden or locally grown)
  • 2 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes (garden or locally grown)
  • 1 can (14 oz) kidney beans, drained and rinsed
  • 1 chipotle pepper in adobo, chopped (garden or locally grown)
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until softened.
  2. Add ground venison and cook until browned.
  3. Stir in diced tomatoes, kidney beans, chipotle pepper, chili powder, cumin, smoked paprika, salt, and black pepper.
  4. Simmer for 45 minutes, stirring occasionally. Adjust seasoning as needed.
  5. Serve hot with a dollop of sour cream and a sprinkle of chopped cilantro.
