Ingredients
- 1 lb ground venison
- 1 onion, chopped (garden or locally grown)
- 2 garlic cloves, minced
- 1 can (14 oz) diced tomatoes (garden or locally grown)
- 1 can (14 oz) kidney beans, drained and rinsed
- 1 chipotle pepper in adobo, chopped (garden or locally grown)
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and black pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until softened.
- Add ground venison and cook until browned.
- Stir in diced tomatoes, kidney beans, chipotle pepper, chili powder, cumin, smoked paprika, salt, and black pepper.
- Simmer for 45 minutes, stirring occasionally. Adjust seasoning as needed.
- Serve hot with a dollop of sour cream and a sprinkle of chopped cilantro.
