Venison Chili with Garden Peppers

Ingredients

  • 1 lb ground venison (whitetail deer)
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups diced garden peppers (bell peppers, jalapeños, or poblanos)
  • 1 can (28 oz) diced tomatoes
  • 2 cups beef or game stock
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 can (15 oz) kidney beans, drained
  • Fresh cilantro, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until fragrant.
  2. Add ground venison and cook until browned. Stir in garden peppers and cook for 5 minutes.
  3. Add diced tomatoes, stock, and spices. Reduce heat to low, cover, and simmer for 1.5 hours.
  4. Stir in beans and simmer for another 15 minutes. Adjust seasoning as needed.
  5. Serve hot, garnished with fresh cilantro.
