Venison Chili with Garden Peppers

Ingredients
- 1 lb ground venison (whitetail deer)
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups diced garden peppers (bell peppers, jalapeños, or poblanos)
- 1 can (28 oz) diced tomatoes
- 2 cups beef or game stock
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- 1 can (15 oz) kidney beans, drained
- Fresh cilantro, for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until fragrant.
- Add ground venison and cook until browned. Stir in garden peppers and cook for 5 minutes.
- Add diced tomatoes, stock, and spices. Reduce heat to low, cover, and simmer for 1.5 hours.
- Stir in beans and simmer for another 15 minutes. Adjust seasoning as needed.
- Serve hot, garnished with fresh cilantro.
