Venison Breakfast Hash

Breakfast hash is a beloved staple in many households, and this version uses tender venison to take it to the next level. Ingredients

  • 1 lb ground venison
  • 2 large potatoes, diced
  • 1 medium onion, diced (garden-grown)
  • 1 bell pepper, diced (garden-grown)
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 4 eggs

Instructions

  1. Heat olive oil in a large skillet. Cook the potatoes over medium heat until golden and crispy, about 10 minutes.
  2. Add onion, bell pepper, and venison to the skillet. Cook until the vegetables are softened and the venison is browned, about 8 minutes.
  3. Season with paprika, garlic powder, salt, and pepper. Make four wells in the hash and crack an egg into each. Cover and cook until the eggs are set, about 5 minutes.
  4. Serve hot, garnished with parsley if desired.
