Sunrise Trout and Eggs

Ingredients

  • 4 trout fillets
  • 4 eggs
  • 1 tomato, diced (garden-grown)
  • 1 green bell pepper, chopped (garden-grown)
  • Salt and pepper to taste
  • 1 tbsp butter

Instructions

  1. In a skillet, melt butter over medium heat. Add trout fillets and cook until golden on each side, about 3-4 minutes per side.
  2. In another pan, fry the eggs to your liking. Serve on top of the trout, garnished with fresh tomato and bell pepper.
