Spiced Duck and Rice Pilaf

Ingredients

  • 4 duck legs
  • 1 cup basmati rice
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp cinnamon
  • 1/2 cup raisins
  • 2 cups chicken stock
  • Salt and black pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Season the duck legs with salt and black pepper. Heat olive oil in a skillet over medium heat and brown the duck legs on all sides. Remove and set aside.
  3. In the same skillet, sauté onion and garlic until softened. Add cumin and cinnamon, stirring for 1 minute.
  4. Add rice, raisins, and chicken stock to the skillet. Stir to combine, then transfer to a baking dish.
  5. Place the duck legs on top of the rice mixture. Cover with foil and bake for 45 minutes, or until the rice is tender and the duck is cooked through.
  6. Serve hot with a sprinkle of fresh herbs, if desired.
