Ingredients
- 4 duck legs
- 1 cup basmati rice
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tsp cumin
- 1 tsp cinnamon
- 1/2 cup raisins
- 2 cups chicken stock
- Salt and black pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- Season the duck legs with salt and black pepper. Heat olive oil in a skillet over medium heat and brown the duck legs on all sides. Remove and set aside.
- In the same skillet, sauté onion and garlic until softened. Add cumin and cinnamon, stirring for 1 minute.
- Add rice, raisins, and chicken stock to the skillet. Stir to combine, then transfer to a baking dish.
- Place the duck legs on top of the rice mixture. Cover with foil and bake for 45 minutes, or until the rice is tender and the duck is cooked through.
- Serve hot with a sprinkle of fresh herbs, if desired.
