Ingredients
- 1 lb alligator meat, cut into bite-sized pieces
- 1 cup buttermilk
- 1 cup flour
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1 cup mayonnaise
- 2 tbsp Dijon mustard
- 1 tbsp hot sauce
- 1 tbsp chopped parsley (garden or locally grown)
- Vegetable oil for frying
Instructions
- Soak alligator meat in buttermilk for 15 minutes.
- Mix flour, paprika, cayenne, salt, and pepper in a bowl.
- Dredge the meat in the flour mixture and fry in hot oil until golden brown.
- For the remoulade, mix mayonnaise, mustard, hot sauce, and parsley in a bowl.
- Serve the alligator bites hot with the remoulade on the side.
