Southern Smoked Duck with Sweet Potato Hash

Ingredients
- 1 whole duck (about 4 lbs)
- 1/4 cup barbecue dry rub
- 4 cups sweet potatoes, diced (garden or locally grown)
- 1 onion, chopped
- 2 tbsp olive oil
- 1 tsp smoked paprika
- Salt and black pepper to taste
Instructions
- Preheat a smoker to 225°F (107°C). Rub the duck generously with the barbecue dry rub.
- Place the duck in the smoker and cook for about 2 hours, or until the internal temperature reaches 165°F (74°C).
- While the duck cooks, toss sweet potatoes and onion with olive oil, smoked paprika, salt, and pepper. Roast in a 400°F (200°C) oven for 30 minutes, stirring halfway through.
- Carve the smoked duck and serve alongside the sweet potato hash.
