Ingredients
- 4 catfish filets
- 1 cup buttermilk
- 1 cup cornmeal
- 1 teaspoon cayenne pepper
- 1 teaspoon garlic powder
- 1 bunch collard greens, chopped (garden or locally grown)
- 2 tablespoons apple cider vinegar
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Marinate catfish in buttermilk for 1 hour. Combine cornmeal, cayenne, garlic powder, salt, and pepper in a shallow dish.
- Coat catfish filets in the cornmeal mixture and fry in hot oil until golden brown. Drain on paper towels.
- In a skillet, sauté collard greens with olive oil, salt, and pepper. Add apple cider vinegar and cook until tender.
- Serve catfish with collard greens on the side.
