Southern Fried Catfish with Collard Greens

Ingredients

  • 4 catfish filets
  • 1 cup buttermilk
  • 1 cup cornmeal
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 bunch collard greens, chopped (garden or locally grown)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Marinate catfish in buttermilk for 1 hour. Combine cornmeal, cayenne, garlic powder, salt, and pepper in a shallow dish.
  2. Coat catfish filets in the cornmeal mixture and fry in hot oil until golden brown. Drain on paper towels.
  3. In a skillet, sauté collard greens with olive oil, salt, and pepper. Add apple cider vinegar and cook until tender.
  4. Serve catfish with collard greens on the side.
