Ingredients

  • 4 duck legs
  • 1 cup barbecue sauce
  • 4 sandwich buns
  • 1 cup shredded green cabbage (garden or locally grown)
  • 1/2 cup shredded carrots (garden or locally grown)
  • 1/4 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (165°C). Season the duck legs with salt and pepper.
  2. In a roasting pan, bake the duck legs for 1 hour 15 minutes, until tender and easily shredded.
  3. Shred the duck meat and mix with barbecue sauce.
  4. In a bowl, combine the cabbage, carrots, mayonnaise, apple cider vinegar, sugar, salt, and pepper to make the coleslaw.
  5. Toast the sandwich buns and fill with the barbecue duck and prepared coleslaw.
