Smothered Rabbit with Mushrooms and Onions

This smothered rabbit recipe features tender rabbit pieces simmered in a creamy mushroom and onion sauce. A comforting, rustic dish perfect for showcasing small game.
Ingredients
- 1 rabbit, cut into pieces
- 2 tbsp olive oil
- 1 cup mushrooms, sliced
- 1 medium onion, sliced (garden-grown)
- 1 cup chicken stock
- 1/2 cup heavy cream
- 1 tbsp flour
- 1 tsp thyme (garden-grown)
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat. Brown rabbit pieces on all sides and set aside.
- Add onions and mushrooms to the skillet and cook until softened. Sprinkle with flour and stir to combine.
- Return rabbit to the skillet, add chicken stock, and bring to a simmer. Cover and cook for 30 minutes.
- Stir in heavy cream and thyme. Simmer for 5 minutes and season with salt and pepper before serving.
