Smothered Rabbit with Mushrooms and Onions

This smothered rabbit recipe features tender rabbit pieces simmered in a creamy mushroom and onion sauce. A comforting, rustic dish perfect for showcasing small game.

Ingredients

  • 1 rabbit, cut into pieces
  • 2 tbsp olive oil
  • 1 cup mushrooms, sliced
  • 1 medium onion, sliced (garden-grown)
  • 1 cup chicken stock
  • 1/2 cup heavy cream
  • 1 tbsp flour
  • 1 tsp thyme (garden-grown)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Brown rabbit pieces on all sides and set aside.
  2. Add onions and mushrooms to the skillet and cook until softened. Sprinkle with flour and stir to combine.
  3. Return rabbit to the skillet, add chicken stock, and bring to a simmer. Cover and cook for 30 minutes.
  4. Stir in heavy cream and thyme. Simmer for 5 minutes and season with salt and pepper before serving.
