Smoked Wild Boar Tacos with Pico de Gallo

Ingredients
- 1 lb wild boar shoulder, shredded
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- Salt and pepper to taste
- 8 small tortillas
- For the pico de gallo:
- 2 tomatoes, diced (garden-grown)
- 1/4 cup onion, diced (garden-grown)
- 1 tbsp fresh cilantro, chopped (garden-grown)
- 1 lime, juiced
- Salt to taste
Instructions
- Marinate wild boar shoulder in olive oil, smoked paprika, garlic powder, salt, and pepper for 1 hour.
- Smoke at 225°F for 1.5 hours or until tender. Shred the meat and set aside.
- For the pico de gallo, mix tomatoes, onion, cilantro, lime juice, and salt in a bowl.
- Assemble tacos with shredded boar and pico de gallo. Serve immediately.
