Ingredients
- 1 lb smoked venison sausage, sliced
- 2 bell peppers, diced (garden-grown)
- 1 medium onion, diced (garden-grown)
- 4 large eggs
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the sausage and cook until browned, about 5 minutes.
- Add diced peppers and onions, cooking until softened, about 8 minutes.
- Make four wells in the skillet mixture and crack an egg into each.
- Cover and cook until the eggs are set, about 5 minutes. Serve immediately.
