Smoked Rabbit BBQ Sandwiches

These smoked rabbit BBQ sandwiches are tender and flavorful, piled high on buns with a tangy homemade barbecue sauce. A unique take on a Southern classic.

Ingredients

  • 2 whole rabbits, cleaned
  • 1/4 cup apple cider vinegar
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 4 sandwich buns
  • 1 cup coleslaw (optional)
  • For the barbecue sauce:
  • 1 cup ketchup
  • 1/4 cup brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tsp mustard

Instructions

  1. Marinate rabbits in apple cider vinegar, olive oil, smoked paprika, garlic powder, salt, and pepper for 1 hour.
  2. Preheat smoker to 225°F. Smoke rabbits for 2 hours or until tender.
  3. Shred the rabbit meat and set aside.
  4. In a saucepan, combine barbecue sauce ingredients and simmer for 10 minutes.
  5. Toss shredded rabbit in the barbecue sauce and serve on buns with coleslaw if desired.
