Smoked Rabbit BBQ Sandwiches

These smoked rabbit BBQ sandwiches are tender and flavorful, piled high on buns with a tangy homemade barbecue sauce. A unique take on a Southern classic.

Ingredients
- 2 whole rabbits, cleaned
- 1/4 cup apple cider vinegar
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- Salt and pepper to taste
- 4 sandwich buns
- 1 cup coleslaw (optional)
- For the barbecue sauce:
- 1 cup ketchup
- 1/4 cup brown sugar
- 2 tbsp apple cider vinegar
- 1 tbsp Worcestershire sauce
- 1 tsp mustard
Instructions
- Marinate rabbits in apple cider vinegar, olive oil, smoked paprika, garlic powder, salt, and pepper for 1 hour.
- Preheat smoker to 225°F. Smoke rabbits for 2 hours or until tender.
- Shred the rabbit meat and set aside.
- In a saucepan, combine barbecue sauce ingredients and simmer for 10 minutes.
- Toss shredded rabbit in the barbecue sauce and serve on buns with coleslaw if desired.
