Ingredients
- 4 quail, smoked (see instructions below)
- 4 cups mixed garden greens
- 1/2 cup pomegranate seeds
- 1/4 cup walnuts, toasted
- 1/4 cup goat cheese, crumbled
- 1/2 cup olive oil
- 2 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- Smoke the Quail: Season quail with salt and pepper. Smoke at 225°F (110°C) for 30 minutes, or until cooked through.
- Prepare the dressing by whisking olive oil, vinegar, mustard, salt, and pepper.
- Toss greens with dressing. Top with smoked quail, pomegranate seeds, walnuts, and goat cheese. Serve immediately.
