Smoked Quail and Pomegranate Salad

Ingredients

  • 4 quail, smoked (see instructions below)
  • 4 cups mixed garden greens
  • 1/2 cup pomegranate seeds
  • 1/4 cup walnuts, toasted
  • 1/4 cup goat cheese, crumbled
  • 1/2 cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Smoke the Quail: Season quail with salt and pepper. Smoke at 225°F (110°C) for 30 minutes, or until cooked through.
  2. Prepare the dressing by whisking olive oil, vinegar, mustard, salt, and pepper.
  3. Toss greens with dressing. Top with smoked quail, pomegranate seeds, walnuts, and goat cheese. Serve immediately.
