Smoked Goose Breast Tacos with Cabbage Slaw

Ingredients

  • 2 goose breasts
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 8 small tortillas
  • 2 cups cabbage, shredded (garden-grown)
  • 1/4 cup sour cream
  • 1 tbsp lime juice
  • 1 tsp honey
  • 1/4 cup fresh cilantro, chopped (garden-grown)

Instructions

  1. Rub goose breasts with garlic powder, smoked paprika, salt, and pepper. Smoke at 225°F for 1 hour or until tender.
  2. In a bowl, mix cabbage with lime juice, honey, and a pinch of salt to create the slaw.
  3. In a separate bowl, mix sour cream with lime juice to make the crema.
  4. Slice the smoked goose and assemble tacos with meat, slaw, and lime crema. Garnish with cilantro and serve.
