Smoked Duck Tacos with Fresh Salsa

Ingredients

  • 4 duck breasts
  • 1 tablespoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup diced tomatoes (garden or locally grown)
  • 1/2 cup diced onion (garden or locally grown)
  • 1/4 cup chopped cilantro (garden or locally grown)
  • Juice of 1 lime
  • 8 small tortillas
  • Salt and pepper to taste

Instructions

  1. Preheat the smoker or grill to 225°F (107°C). Season the duck breasts with smoked paprika, cumin, chili powder, salt, and pepper.
  2. Smoke the duck for 1 hour or until fully cooked. Let rest before slicing.
  3. In a bowl, combine tomatoes, onion, cilantro, lime juice, salt, and pepper to make the fresh salsa.
  4. Warm the tortillas and assemble with smoked duck and salsa.
  5. Serve immediately.
