Ingredients
- 4 duck breasts
- 1 tablespoon smoked paprika
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup diced tomatoes (garden or locally grown)
- 1/2 cup diced onion (garden or locally grown)
- 1/4 cup chopped cilantro (garden or locally grown)
- Juice of 1 lime
- 8 small tortillas
- Salt and pepper to taste
Instructions
- Preheat the smoker or grill to 225°F (107°C). Season the duck breasts with smoked paprika, cumin, chili powder, salt, and pepper.
- Smoke the duck for 1 hour or until fully cooked. Let rest before slicing.
- In a bowl, combine tomatoes, onion, cilantro, lime juice, salt, and pepper to make the fresh salsa.
- Warm the tortillas and assemble with smoked duck and salsa.
- Serve immediately.
