Ingredients
- 2 duck breasts
- 1 cup mixed wild berries (garden or locally grown)
- 4 cups mixed salad greens (garden or locally grown)
- 1/4 cup pecans, toasted
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tsp honey
- Salt and black pepper to taste
Instructions
- Preheat a smoker to 225°F (110°C). Season the duck breasts with salt and black pepper.
- Smoke the duck breasts for 1.5-2 hours, or until the internal temperature reaches 135°F (57°C) for medium rare.
- Let the duck rest for 10 minutes, then slice thinly.
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and black pepper to make the dressing.
- Arrange the salad greens, wild berries, and toasted pecans on a plate. Top with sliced smoked duck and drizzle with dressing.
