Smoked Duck and Wild Berry Salad

Ingredients

  • 2 duck breasts
  • 1 cup mixed wild berries (garden or locally grown)

  • 2 tbsp balsamic vinegar
  • 1 tsp honey
  • Salt and black pepper to taste

Instructions

  1. Preheat a smoker to 225°F (110°C). Season the duck breasts with salt and black pepper.
  2. Smoke the duck breasts for 1.5-2 hours, or until the internal temperature reaches 135°F (57°C) for medium rare.
  3. Let the duck rest for 10 minutes, then slice thinly.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and black pepper to make the dressing.
  5. Arrange the salad greens, wild berries, and toasted pecans on a plate. Top with sliced smoked duck and drizzle with dressing.
  6. Serve immediately for a refreshing and satisfying meal.
