Ingredients
- 1 rabbit, cut into pieces
- 2 tbsp olive oil
- 1 onion, diced (garden-grown)
- 2 cloves garlic, minced (garden-grown)
- 2 cups tomatoes, diced (garden-grown)
- 1 cup chicken stock
- 1 tsp thyme (garden-grown)
- Salt and pepper to taste
- Pasta of choice, for serving
Instructions
- Heat olive oil in a large pot. Brown rabbit pieces on all sides and set aside.
- Add onions and garlic to the pot, cooking until softened. Stir in tomatoes, chicken stock, thyme, salt, and pepper.
- Return rabbit to the pot. Cover and simmer on low heat for 2 hours, or until the meat is tender and falls off the bone.
- Serve ragu over pasta and garnish with fresh parsley if desired.
