Slow-Cooked Rabbit Ragu with Pasta

Ingredients

  • 1 rabbit, cut into pieces
  • 2 tbsp olive oil
  • 1 onion, diced (garden-grown)
  • 2 cloves garlic, minced (garden-grown)
  • 2 cups tomatoes, diced (garden-grown)
  • 1 cup chicken stock
  • 1 tsp thyme (garden-grown)
  • Salt and pepper to taste
  • Pasta of choice, for serving

Instructions

  1. Heat olive oil in a large pot. Brown rabbit pieces on all sides and set aside.
  2. Add onions and garlic to the pot, cooking until softened. Stir in tomatoes, chicken stock, thyme, salt, and pepper.
  3. Return rabbit to the pot. Cover and simmer on low heat for 2 hours, or until the meat is tender and falls off the bone.
  4. Serve ragu over pasta and garnish with fresh parsley if desired.
