Slow-Cooked Duck with Apple Cider Sauce

Ingredients

  • 4 duck legs
  • 1 cup apple cider (garden or locally grown)
  • 1 onion, chopped (garden or locally grown)
  • 2 garlic cloves, minced (garden or locally grown)
  • 1 tsp rosemary, chopped (garden or locally grown)
  • 1/2 tsp cinnamon
  • Salt and black pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Season the duck legs with salt, black pepper, and cinnamon.
  3. Heat olive oil in a large Dutch oven over medium heat. Sear the duck legs on all sides until golden brown. Remove and set aside.
  4. In the same pot, sauté onion and garlic until softened. Add apple cider and rosemary, stirring to deglaze the pan.
  5. Return the duck legs to the pot, cover, and transfer to the oven. Cook for 3 hours, basting occasionally, until the meat is tender and falls off the bone.
  6. Serve with roasted apples or a side of wild rice.
