Seared Duck Breast with Blueberry Sauce

Ingredients

  • 2 duck breasts
  • 1 cup fresh blueberries (garden or locally grown)
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon fresh thyme (garden or locally grown)
  • Salt and pepper to taste

Instructions

  1. Score the duck breasts and season with salt and pepper.
  2. Heat a skillet over medium heat. Place the duck breasts skin-side down and sear for 8-10 minutes until crispy. Flip and cook for another 5 minutes.
  3. In a saucepan, combine blueberries, balsamic vinegar, honey, and thyme. Simmer until the sauce thickens.
  4. Slice the duck breasts and drizzle with the blueberry sauce before serving.
