Rabbit Stew with Dumplings

This rustic rabbit stew, paired with fluffy dumplings, is a hearty dish that warms the soul. It's a nod to traditional Midwestern and Appalachian cooking, where rabbit was a staple protein for generations.

Ingredients

  • 1 rabbit, cut into pieces
  • 1 medium onion, diced (garden-grown)
  • 2 carrots, sliced (garden-grown)
  • 2 celery stalks, sliced (garden-grown)
  • 2 tbsp flour
  • 2 cups chicken stock
  • 1/2 cup milk
  • 1 tbsp parsley (garden-grown)
  • Salt and pepper to taste
  • Prepared dumpling dough

Instructions

  1. Season rabbit pieces with salt and pepper. Brown in a large pot and set aside.
  2. Sauté onion, carrots, and celery in the same pot until softened. Sprinkle with flour and cook for 2 minutes.
  3. Add chicken stock and milk, stirring until smooth. Return the rabbit to the pot and simmer for 40 minutes.
  4. Drop spoonfuls of dumpling dough into the stew. Cover and cook for 15 minutes, or until dumplings are cooked through. Serve hot.
