Rabbit Stew with Dumplings

Ingredients
- 1 rabbit, cut into pieces
- 1 medium onion, diced (garden-grown)
- 2 carrots, sliced (garden-grown)
- 2 celery stalks, sliced (garden-grown)
- 2 tbsp flour
- 2 cups chicken stock
- 1/2 cup milk
- 1 tbsp parsley (garden-grown)
- Salt and pepper to taste
- Prepared dumpling dough
Instructions
- Season rabbit pieces with salt and pepper. Brown in a large pot and set aside.
- Sauté onion, carrots, and celery in the same pot until softened. Sprinkle with flour and cook for 2 minutes.
- Add chicken stock and milk, stirring until smooth. Return the rabbit to the pot and simmer for 40 minutes.
- Drop spoonfuls of dumpling dough into the stew. Cover and cook for 15 minutes, or until dumplings are cooked through. Serve hot.
