Rabbit and Dumplings

A rich and creamy rabbit stew with fluffy dumplings, this dish is a nod to traditional Southern cuisine.

Ingredients

  • 1 rabbit, cut into pieces
  • 1 cup carrots, diced (garden-grown)
  • 1 cup celery, diced (garden-grown)
  • 1 medium onion, diced (garden-grown)
  • 1 cup all-purpose flour
  • 1/4 cup butter
  • 2 cups chicken stock
  • 1 cup milk
  • 1 tbsp fresh parsley, chopped (garden-grown)
  • Salt and pepper to taste

Instructions

  1. Season and brown rabbit pieces in a large pot with butter. Remove and set aside.
  2. Sauté carrots, celery, and onion until softened. Stir in flour to make a roux.
  3. Slowly add chicken stock and milk, whisking until smooth. Return rabbit to the pot and simmer for 45 minutes.
  4. Mix dumpling batter (your favorite recipe) and drop spoonfuls into the stew. Cook for 15 minutes or until dumplings are fluffy. Serve hot.
