Rabbit and Dumplings

A rich and creamy rabbit stew with fluffy dumplings, this dish is a nod to traditional Southern cuisine.

Ingredients
- 1 rabbit, cut into pieces
- 1 cup carrots, diced (garden-grown)
- 1 cup celery, diced (garden-grown)
- 1 medium onion, diced (garden-grown)
- 1 cup all-purpose flour
- 1/4 cup butter
- 2 cups chicken stock
- 1 cup milk
- 1 tbsp fresh parsley, chopped (garden-grown)
- Salt and pepper to taste
Instructions
- Season and brown rabbit pieces in a large pot with butter. Remove and set aside.
- Sauté carrots, celery, and onion until softened. Stir in flour to make a roux.
- Slowly add chicken stock and milk, whisking until smooth. Return rabbit to the pot and simmer for 45 minutes.
- Mix dumpling batter (your favorite recipe) and drop spoonfuls into the stew. Cook for 15 minutes or until dumplings are fluffy. Serve hot.
