Quail and Grits with Herb Butter

This Southern classic pairs grilled quail with creamy grits and an herb-infused butter sauce for a taste of tradition.

Ingredients

  • 4 quail
  • 1 cup grits
  • 2 cups chicken stock
  • 4 tbsp unsalted butter
  • 1 tsp fresh parsley, chopped (garden-grown)
  • 1 tsp fresh chives, chopped (garden-grown)
  • Salt and pepper to taste

Instructions

  1. Cook the grits in chicken stock according to package instructions. Stir in 2 tbsp butter and season with salt and pepper.
  2. Season the quail with salt and pepper. Grill over medium-high heat for 4 minutes per side or until cooked through.
  3. Melt the remaining butter and mix in parsley and chives.
  4. Serve the quail over the grits and drizzle with herb butter.
