Quail and Grits with Herb Butter

This Southern classic pairs grilled quail with creamy grits and an herb-infused butter sauce for a taste of tradition.

Ingredients
- 4 quail
- 1 cup grits
- 2 cups chicken stock
- 4 tbsp unsalted butter
- 1 tsp fresh parsley, chopped (garden-grown)
- 1 tsp fresh chives, chopped (garden-grown)
- Salt and pepper to taste
Instructions
- Cook the grits in chicken stock according to package instructions. Stir in 2 tbsp butter and season with salt and pepper.
- Season the quail with salt and pepper. Grill over medium-high heat for 4 minutes per side or until cooked through.
- Melt the remaining butter and mix in parsley and chives.
- Serve the quail over the grits and drizzle with herb butter.
