Pan-Seared Pheasant with Wild Berry Sauce

Ingredients

  • 2 pheasant breasts
  • 1 cup mixed wild berries (garden-grown or foraged)
  • 1/4 cup red wine
  • 1 tbsp honey
  • 1 tsp fresh thyme, chopped (garden-grown)
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Season pheasant breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear pheasant for 3-4 minutes per side until cooked through. Set aside.
  2. In the same skillet, add berries, red wine, honey, and thyme. Simmer until sauce thickens, about 5 minutes.
  3. Serve the pheasant topped with the wild berry sauce.
