Pan-Seared Pheasant with Wild Berry Sauce

Ingredients
- 2 pheasant breasts
- 1 cup mixed wild berries (garden-grown or foraged)
- 1/4 cup red wine
- 1 tbsp honey
- 1 tsp fresh thyme, chopped (garden-grown)
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Season pheasant breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear pheasant for 3-4 minutes per side until cooked through. Set aside.
- In the same skillet, add berries, red wine, honey, and thyme. Simmer until sauce thickens, about 5 minutes.
- Serve the pheasant topped with the wild berry sauce.
