Pan-Seared Grouse with Mushroom Sauce

Ingredients

  • 4 grouse breasts
  • 2 tbsp olive oil
  • 2 cups mushrooms, sliced
  • 1 clove garlic, minced (garden-grown)
  • 1/2 cup chicken stock
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Season grouse breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear breasts for 4-5 minutes per side. Remove and set aside.
  2. In the same skillet, sauté mushrooms and garlic until softened.
  3. Add chicken stock and simmer for 5 minutes. Stir in cream and cook until thickened.
  4. Return grouse to the skillet to heat through. Serve with mushroom sauce spooned over the top.
