Ingredients
- 4 grouse breasts
- 2 tbsp olive oil
- 2 cups mushrooms, sliced
- 1 clove garlic, minced (garden-grown)
- 1/2 cup chicken stock
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- Season grouse breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear breasts for 4-5 minutes per side. Remove and set aside.
- In the same skillet, sauté mushrooms and garlic until softened.
- Add chicken stock and simmer for 5 minutes. Stir in cream and cook until thickened.
- Return grouse to the skillet to heat through. Serve with mushroom sauce spooned over the top.
