Pan-Seared Grouse with Berry Reduction

Ingredients

  • 4 grouse breasts
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1/2 cup fresh or frozen berries (garden or locally grown)
  • 1/4 cup red wine
  • 1 tbsp honey
  • 1 tsp fresh thyme (garden or locally grown)

Instructions

  1. Season grouse breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear grouse for 3-4 minutes per side. Remove and let rest.
  2. In the same skillet, add berries, red wine, honey, and thyme. Simmer until the sauce reduces and thickens.
  3. Plate grouse and drizzle with berry reduction before serving.
