Ingredients
- 4 grouse breasts
- Salt and pepper to taste
- 2 tbsp olive oil
- 1/2 cup fresh or frozen berries (garden or locally grown)
- 1/4 cup red wine
- 1 tbsp honey
- 1 tsp fresh thyme (garden or locally grown)
Instructions
- Season grouse breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear grouse for 3-4 minutes per side. Remove and let rest.
- In the same skillet, add berries, red wine, honey, and thyme. Simmer until the sauce reduces and thickens.
- Plate grouse and drizzle with berry reduction before serving.
