Pan-Seared Goose Breast with Apple Cider Reduction

Ingredients

  • 2 goose breasts
  • 1 cup apple cider
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1 tsp fresh thyme, chopped (garden-grown)
  • Salt and pepper to taste
  • Olive oil for searing

Instructions

  1. Score the skin of the goose breasts and season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear goose breasts skin-side down for 5 minutes, then flip and cook for an additional 3-4 minutes. Set aside.
  3. In the same skillet, add apple cider, honey, Dijon mustard, and thyme. Simmer until reduced to a thick sauce.
  4. Slice the goose breasts and drizzle with the apple cider reduction before serving.
