Pan-Fried Trout with Almond Butter

Ingredients

  • 4 trout fillets
  • 1/2 cup flour
  • Salt and pepper to taste
  • 2 tbsp butter
  • 1/4 cup sliced almonds
  • Juice of 1 lemon
  • 1 tbsp fresh parsley, chopped (garden-grown)

Instructions

  1. Season trout fillets with salt and pepper, then coat lightly in flour.
  2. Heat 1 tbsp butter in a skillet over medium heat. Cook trout for 3-4 minutes per side until golden and crispy. Remove and set aside.
  3. Add remaining butter, almonds, and lemon juice to the skillet. Cook for 2 minutes, stirring, then spoon over trout fillets.
  4. Garnish with parsley and serve immediately.
