Northeast Maple-Glazed Duck with Roasted Apples

This dish celebrates the Northeast's rich hunting traditions and its love for maple syrup and apples. Ingredients

  • 1 whole duck (about 4 lbs)
  • 1/2 cup maple syrup (garden or locally grown)
  • 2 tbsp soy sauce
  • 1 tsp ground ginger
  • 4 apples, quartered (garden or locally grown)
  • 1 tbsp butter
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Season the duck inside and out with salt and black pepper.
  2. In a small saucepan, combine maple syrup, soy sauce, and ginger. Heat gently until combined.
  3. Brush the duck with the glaze and place in a roasting pan. Arrange apples around the duck and dot with butter.
  4. Roast for 1 hour 15 minutes, basting every 20 minutes, until the duck is golden and the apples are tender.
  5. Let rest for 10 minutes before carving. Serve with the roasted apples.
