Northeast Maple-Glazed Duck with Roasted Apples

Ingredients
- 1 whole duck (about 4 lbs)
- 1/2 cup maple syrup (garden or locally grown)
- 2 tbsp soy sauce
- 1 tsp ground ginger
- 4 apples, quartered (garden or locally grown)
- 1 tbsp butter
- Salt and black pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Season the duck inside and out with salt and black pepper.
- In a small saucepan, combine maple syrup, soy sauce, and ginger. Heat gently until combined.
- Brush the duck with the glaze and place in a roasting pan. Arrange apples around the duck and dot with butter.
- Roast for 1 hour 15 minutes, basting every 20 minutes, until the duck is golden and the apples are tender.
- Let rest for 10 minutes before carving. Serve with the roasted apples.
