Ingredients
- 1 whole duck (about 4 lbs)
- 1 cup fresh cranberries (garden or locally grown)
- 1/2 cup orange juice
- 1/4 cup honey
- 1 tsp cinnamon
- 2 cups cooked wild rice
- Salt and black pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Season the duck with salt and black pepper.
- In a saucepan, combine cranberries, orange juice, honey, and cinnamon. Simmer until the cranberries burst and the mixture thickens.
- Brush the duck with the glaze and place it in a roasting pan. Roast for 1 hour 20 minutes, basting every 20 minutes.
