New Hampshire Maple Duck Salad

This light and refreshing salad combines tender duck with fresh greens, apples, and a maple vinaigrette, celebrating New Hampshire’s maple syrup heritage.

Ingredients
- 2 duck breasts
- 4 cups mixed greens (garden or locally grown)
- 1 apple, thinly sliced (garden or locally grown)
- 1/4 cup pecans, toasted
- 2 tablespoons olive oil
- 2 tablespoons maple syrup
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
- Score the duck breasts and season with salt and pepper.
- Heat a skillet over medium heat. Sear the duck breasts skin-side down for 8-10 minutes, then flip and cook for another 5 minutes. Let rest before slicing.
- In a small bowl, whisk together olive oil, maple syrup, apple cider vinegar, salt, and pepper to make the vinaigrette.
- In a large bowl, combine greens, apple slices, and pecans. Toss with the vinaigrette.
- Top the salad with sliced duck and serve.
