Mule Deer Stroganoff

Stroganoff has long been a dish that brings comfort and warmth, and this version highlights the lean, earthy flavors of mule deer. Originating in Russia, stroganoff has evolved over the years to include local game meats, making it a staple for hunters and those who appreciate wild flavors.

Ingredients

  • 2 lbs mule deer backstrap, sliced thin
  • 1 medium onion, diced (garden-grown)
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced (garden-grown)
  • 1 cup sour cream
  • 2 cups beef stock
  • 2 tbsp all-purpose flour
  • 2 tbsp unsalted butter
  • Salt and pepper to taste
  • 12 oz egg noodles

Instructions

  1. Season the mule deer slices with salt and pepper. Sear in butter until browned, then set aside.
  2. Sauté onions, mushrooms, and garlic in the same pan until softened. Sprinkle with flour and cook for 2 minutes.
  3. Add beef stock and simmer until thickened. Stir in sour cream and return the mule deer to the pan. Simmer for 10 minutes.
  4. Serve over cooked egg noodles. Garnish with parsley if desired.
