Mini Duck Sliders with Tangy Slaw

Ingredients

  • 4 duck legs
  • 1 cup barbecue sauce
  • 8 mini slider buns
  • 1 cup shredded cabbage (garden or locally grown)
  • 1/2 cup shredded carrots (garden or locally grown)
  • 1/4 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (165°C). Season the duck legs with salt and pepper and roast in a pan for 1 hour, until tender. Shred the meat and mix with barbecue sauce.
  2. In a bowl, combine cabbage, carrots, mayonnaise, apple cider vinegar, sugar, salt, and pepper to make the slaw.
  3. Toast the slider buns. Assemble with a generous portion of barbecue duck and tangy slaw.
