Midwestern Fried Catfish with Dill Tartar Sauce

Ingredients

  • 4 catfish fillets
  • 1 cup cornmeal
  • 1/2 cup flour

  • 1 tsp garlic powder

  • 1 cup buttermilk
  • Vegetable oil for frying
  • 1/2 cup mayonnaise
  • 1 tbsp dill, chopped (garden or locally grown)
  • 1 tbsp lemon juice (garden or locally grown)
  • 1 tsp capers, chopped

Instructions

  1. In a shallow dish, combine cornmeal, flour, paprika, garlic powder, salt, and black pepper.
  2. Pour buttermilk into another shallow dish. Dip each catfish fillet into the buttermilk, then dredge in the cornmeal mixture.
  3. Heat vegetable oil in a large skillet over medium heat. Fry the fillets for 4-5 minutes on each side, or until golden brown and cooked through.
  4. In a small bowl, mix mayonnaise, dill, lemon juice, and capers to make the tartar sauce.
  5. Serve the fried catfish hot with tartar sauce on the side.
