Massachusetts Cranberry Duck

Ingredients

  • 2 duck breasts
  • 1 cup fresh cranberries (garden or locally grown)
  • 1/4 cup orange juice
  • 2 tablespoons honey
  • 1 teaspoon fresh rosemary (garden or locally grown)
  • Salt and pepper to taste

Instructions

  1. Score the duck breasts and season with salt and pepper.
  2. Heat a skillet over medium heat. Place the duck breasts skin-side down and sear for 8-10 minutes until crispy. Flip and cook for another 5 minutes.
  3. In a saucepan, combine cranberries, orange juice, honey, and rosemary. Simmer until thickened.
  4. Slice the duck breasts and drizzle with the cranberry glaze before serving.
