These savory duck cakes are a creative twist on Maryland’s iconic crab cakes. Packed with flavor and seasoned to perfection, they’re an excellent appetizer or main course.

Ingredients
- 2 cups cooked duck, shredded
- 1/2 cup breadcrumbs
- 1/4 cup mayonnaise
- 1 egg, beaten
- 1 tablespoon Dijon mustard
- 1 teaspoon Old Bay seasoning
- 1 tablespoon fresh parsley, chopped (garden or locally grown)
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a bowl, mix shredded duck, breadcrumbs, mayonnaise, egg, Dijon mustard, Old Bay seasoning, parsley, salt, and pepper.
- Form the mixture into small patties.
- Heat olive oil in a skillet over medium heat. Cook the duck cakes for 3-4 minutes per side, until golden brown.
- Serve with a dipping sauce or a side salad.
